The origin of this recipe comes from LIRIA a small
village in Valencia province, and was called SAMBAROT, therefore this is a
typical Mediterranean food. On the other hand, due to our border location
between Valencian and Castellano-Manchega cultures we have also developed
the variant of PISTO MARINATED.
In a specific moment during the process we boil the tomato to evaporate
part of its water, this means that we keep the aromas, calcic salts,
proteins and the rest of solid components of the tomato. In the label we
state Fried in pan, and so it is.
