Deer sirloin steak with wine dragee figs "la Jalancina" server with lemon marmalade puree and a touch of pepper

 

Ingredients:

 

Deer sirloin steak

Salt and pepper

Green asparagus

2 glasses with hunting juice

"la Jalancina" wine figs

Lemon marmalade "la Jalancina"

Fresh herbs (personal choice)

Extra virgin olive oil

 

 

Preparation:

 

Clean the sirloin steak and season it.  Stir it in a santé and separate.

In the same pan stir the dragee figs "la Jalancina" mix with the hunting Juice. Add the herbs (tarragon and thyme) and season to taste.   Separate

The fat and add the lemon marmalade and the green asparagus.  Decorate.
